Pomegranate Mousse and Tuile Recipe

Ingredients:

  • 1 cup pomegranate juice
  • 1/4 cup sugar
  • 2 egg yolks
  • 1 1/2 tsp gelatin powder
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup butter, melted
  • 1/2 cup sugar
  • 2 egg whites

Instructions:

  1. In a saucepan, heat pomegranate juice and sugar over medium heat, stirring until sugar dissolves.
  2. In a separate bowl, whisk egg yolks and slowly pour in the hot juice mixture while whisking until completely combined.
  3. Return the mixture to the saucepan and continue to cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
  4. Remove from heat and sprinkle gelatin on top, whisking until completely dissolved.
  5. In a separate bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Fold in the pomegranate mixture.
  6. Pour the mixture into serving dishes and chill in the fridge for at least 4 hours until set.
  7. Preheat the oven to 350°F. In a bowl, mix together flour, butter, sugar, and egg whites until well combined.
  8. Line a baking sheet with parchment paper. Using a spatula, spread the mixture thinly on the parchment paper in the desired shape.
  9. Bake in the oven for 5-7 minutes until lightly golden brown.
  10. Remove from oven and cut into desired shapes before it cools and hardens.
  11. Serve the chilled pomegranate mousse with the tuile on top.
