Prawn Stew Recipe

Ingredients

  • 500g prawns, peeled and deveined
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, chopped
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 400g tin chopped tomatoes
  • 1 tablespoon tomato puree
  • 250ml fish stock
  • 1 bay leaf
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pan and then add the chopped onion and garlic. Cook until they are soft and fragrant.
  2. Add the red and yellow peppers to the pan and cook for another 5 minutes or until softened.
  3. Add the tin of chopped tomatoes and tomato puree to the pan and stir to combine the ingredients.
  4. Pour in the fish stock and add the bay leaf, smoked paprika and cumin. Stir to combine.
  5. Bring the mixture to a boil and then reduce the heat to a simmer. Allow the stew to simmer for around 15-20 minutes, until the vegetables are soft and the sauce has thickened.
  6. Season with salt and pepper to taste.
  7. Add the prawns to the pan and cook for 3-5 minutes, until they are pink and cooked through. Be careful not to overcook the prawns as they can become tough.
  8. Remove the bay leaf from the pan and serve the prawn stew hot.

Serving Suggestions

This prawn stew can be served with crusty bread or a side of rice. You can also add some chopped fresh herbs, such as parsley or coriander, to give the dish an extra burst of flavour.
