Prawn Stew Recipe
Ingredients
- 500g prawns, peeled and deveined
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, chopped
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 400g tin chopped tomatoes
- 1 tablespoon tomato puree
- 250ml fish stock
- 1 bay leaf
- 2 teaspoons smoked paprika
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pan and then add the chopped onion and garlic. Cook until they are soft and fragrant.
- Add the red and yellow peppers to the pan and cook for another 5 minutes or until softened.
- Add the tin of chopped tomatoes and tomato puree to the pan and stir to combine the ingredients.
- Pour in the fish stock and add the bay leaf, smoked paprika and cumin. Stir to combine.
- Bring the mixture to a boil and then reduce the heat to a simmer. Allow the stew to simmer for around 15-20 minutes, until the vegetables are soft and the sauce has thickened.
- Season with salt and pepper to taste.
- Add the prawns to the pan and cook for 3-5 minutes, until they are pink and cooked through. Be careful not to overcook the prawns as they can become tough.
- Remove the bay leaf from the pan and serve the prawn stew hot.
Serving Suggestions
This prawn stew can be served with crusty bread or a side of rice. You can also add some chopped fresh herbs, such as parsley or coriander, to give the dish an extra burst of flavour.
