Pressed Beef, Parsley with Anchovies Recipe

Ingredients

  • 2 lbs beef tenderloin, trimmed
  • 4 garlic cloves, minced
  • 1/2 cup fresh parsley, chopped
  • 8 anchovy fillets, chopped
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season the beef tenderloin with salt and pepper and roast in the oven for 20-25 minutes until internal temperature reaches 130°F (54°C).
  3. Remove the beef from the oven and allow to cool to room temperature.
  4. In a small bowl, mix together the minced garlic, chopped parsley, and chopped anchovy fillets.

  10. Thinly slice the beef and serve immediately.
