Raspberry Financiers – Treat

Raspberry Financiers Recipe

Ingredients:

  • 1/2 cup unsalted butter
  • 1/2 cup almond flour
  • 1 cup powdered sugar
  • 1/2 cup all-purpose flour
  • 5 egg whites
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh raspberries

Instructions:

  1. Preheat your oven to 350°F.
  2. Melt the butter in a small saucepan over medium-low heat. Cook, stirring often, until it turns brown and develops a nutty aroma, for about 5 minutes. Be careful not to burn it. Remove from heat and allow it to cool for a few minutes.
  3. In a mixing bowl, combine the almond flour, powdered sugar, and all-purpose flour.
  4. In a separate mixing bowl, beat the egg whites on high speed until they form stiff peaks. Fold in the flour mixture and then add the browned butter and vanilla extract. Mix well.
  5. Lightly grease and flour a muffin tin. Spoon the batter into each cup about 3/4 full, and then add a few raspberries to each cup, pressing them gently into the batter.
  6. Bake for 18-20 minutes or until the edges of the financiers are golden brown and a toothpick inserted into the center comes out clean. Let them cool in the tin for a few minutes, then remove them and place them on a wire rack to cool completely.

Serving Suggestions:

  • Serve warm or at room temperature.
  • Sprinkle powdered sugar on top of the financiers before serving.
  • You can also serve them with a raspberry compote or vanilla ice cream.

Verdict:

These raspberry financiers are a delicious treat perfect for any occasion. They have a moist, tender crumb, and the fresh raspberries add a burst of flavor. The browned butter gives them a nutty, caramelized taste that complements the sweetness of the powdered sugar. Serve them as a dessert at a party or enjoy them as an afternoon snack with a cup of tea.
