Red Onion Bhajis and Garlic Raita Recipe

Ingredients:

  • 2 large red onions
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon fennel seeds
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 cup chickpea flour
  • 1/2 cup water
  • Oil for frying

Instructions:

  1. Peel and slice the onions thinly.
  2. Heat a pan over medium heat.
  3. Add the cumin seeds, coriander seeds, and fennel seeds to the pan.
  4. Toast the spices for 1-2 minutes or until fragrant.
  5. Remove the spices from the pan and grind them in a spice grinder.
  6. In a medium-sized mixing bowl, add the ground spices, turmeric, chili powder, salt, and chickpea flour. Mix well.
  7. Slowly mix in the water until you get a thick batter. Add more water if necessary.
  8. Add the sliced onions to the batter and mix until all onions are coated in the batter.
  9. Heat oil in a deep frying pan over high heat.
  10. Use a spoon to drop tablespoon sized scoops of the onion mixture into the hot oil and fry until golden brown, about 3-4 minutes.
  11. Remove the bhajis from the oil and place them on a paper towel to drain excess oil.

Garlic Raita Recipe:

  • 1 cup plain yogurt
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon chili powder
  • Chopped cilantro for garnish (optional)

Instructions:

  1. In a small mixing bowl, combine the yogurt, garlic, salt, cumin powder, coriander powder, and chili powder. Mix well.
  2. Cover and refrigerate until ready to serve.
  3. When serving, garnish with chopped cilantro if desired.
