Roman-Style Artichokes Recipe

Ingredients:

  • 4 large artichokes
  • 2 lemons
  • 4 tbsp extra virgin olive oil
  • 3 garlic cloves, chopped
  • 1 cup water
  • Salt and pepper to taste

Instructions:

  1. Fill a large bowl with cold water and squeeze the juice of one lemon into it.
  2. Trim the artichokes: remove the tough outer leaves until you reach the tender ones. Cut off the top quarter of the artichokes and trim the end of the stem. Finally, cut the artichokes into quarters.
  3. Put the artichokes into the lemon water to prevent them from discoloring.
  4. In a large frying pan, heat the olive oil over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant.
  5. Add the artichokes and toss them in the garlic oil for a couple of minutes.
  6. Add the water, salt, and pepper. Squeeze the remaining lemon over the artichokes and stir to combine everything.
  7. Cover the pan and let the artichokes simmer for 15-20 minutes until tender. If there’s still liquid in the pan, remove the lid and let it evaporate for a few minutes.
  8. Remove the pan from heat and let the artichokes cool for a couple of minutes before serving.
