Roman-style Tripe Recipe

Ingredients:

  • 1 kg cow tripe, cleaned and washed thoroughly
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 3 tbsp olive oil
  • 500g canned tomatoes, drained and chopped
  • 200ml beef stock
  • 100g pecorino romano cheese, grated
  • 1 tbsp dried oregano
  • Salt and pepper to taste

Instructions:

  1. Cut the cow tripe into small strips and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic. Cook until the onion has softened but is not browned.
  3. Add the chopped tomatoes, beef stock, and dried oregano to the pot. Mix well and bring to a boil.
  4. Add the cow tripe to the pot, reduce the heat to low, and simmer for 2-3 hours or until the tripe is tender.
  5. Add salt and pepper to taste.
  6. Serve hot topped with grated pecorino romano cheese.
