  1. Preheat the oven to 180°C/350°F/Gas 4.
  2. Boil 4 eggs for 5½ minutes, then transfer to a bowl of cold water to stop the cooking process.
  3. Take 400g of sausage meat and divide it into 4 equal portions. Flatten each portion into a disc and wrap around each boiled egg, molding the sausage meat around the egg to cover it completely.
  4. Whisk an egg in one bowl and put 100g of breadcrumbs in another. Dip each sausage covered egg in the egg wash, then roll in the breadcrumbs. Repeat so that each egg is double coated, then place onto a lined baking tray. Bake for 25-30 minutes.
