Vegetarian Spring Roll Recipe

Ingredients:

  • 10 spring roll wrappers
  • 2 carrots, thinly sliced
  • 1/4 cabbage, thinly sliced
  • 1/2 cup bean sprouts
  • 1/2 cup chopped mushrooms
  • 1/4 cup chopped spring onion
  • 1/4 cup chopped coriander leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions:

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the sliced carrots and cabbage and sauté for 1-2 minutes.
  3. Add the bean sprouts and mushroom and sauté for another minute.
  4. Add the chopped spring onion and coriander leaves and stir well.
  5. Season with salt and black pepper and mix.
  6. Remove the mixture from heat and let it cool down.
  7. Take a spring roll wrapper and put 2 tablespoons of the vegetable mixture on one side of the wrapper.
  8. Fold the bottom of the wrapper over the mixture and tuck it in.
  9. Roll the spring roll tightly, folding the sides in as you go.
  10. Repeat with the remaining wrappers and filling.
  11. Heat vegetable oil in a frying pan over medium heat.
  12. Add the spring rolls and cook until the wrappers are crispy and golden brown.
  13. Remove the spring rolls from the frying pan and place them on paper towels to drain excess oil.
  14. Serve hot with your favourite dipping sauce.
