Tarka Dal Recipe

Ingredients:

  • 1 cup split yellow lentils (toor dal)
  • 4 cups water
  • 1 tsp turmeric
  • 1 tsp salt
  • 1 tomato, chopped
  • 1 tsp grated ginger
  • 1 tsp chopped garlic
  • 1 green chili, chopped
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 2 tbsp ghee (clarified butter)
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Handful of fresh coriander leaves, chopped

Instructions:

  1. Rinse the lentils in water until the water runs clear.
  2. In a large pot, add the lentils, water, turmeric, salt, and chopped tomato. Bring to a boil and then turn down the heat to a low simmer. Cook until the lentils are soft and fully cooked, about 20-25 minutes.
  3. While the lentils are cooking, prepare the tarka. In a small frying pan, heat the ghee over medium-high heat. Add the cumin and mustard seeds and cook until they start to pop, about 1-2 minutes.
  4. Add the grated ginger, chopped garlic, and green chili and cook for another 1-2 minutes until fragrant and lightly browned.
  5. Add the red chili powder and garam masala to the pan and stir to combine. Cook for another 30 seconds and then remove from heat.
  6. Add the tarka to the lentil pot and stir well. Cook for another 5 minutes over low heat until the flavors are fully combined.
  7. Top with fresh coriander before serving.
