Tarka Dal Recipe
Ingredients:
- 1 cup split yellow lentils (toor dal)
- 4 cups water
- 1 tsp turmeric
- 1 tsp salt
- 1 tomato, chopped
- 1 tsp grated ginger
- 1 tsp chopped garlic
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 2 tbsp ghee (clarified butter)
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Handful of fresh coriander leaves, chopped
Instructions:
- Rinse the lentils in water until the water runs clear.
- In a large pot, add the lentils, water, turmeric, salt, and chopped tomato. Bring to a boil and then turn down the heat to a low simmer. Cook until the lentils are soft and fully cooked, about 20-25 minutes.
- While the lentils are cooking, prepare the tarka. In a small frying pan, heat the ghee over medium-high heat. Add the cumin and mustard seeds and cook until they start to pop, about 1-2 minutes.
- Add the grated ginger, chopped garlic, and green chili and cook for another 1-2 minutes until fragrant and lightly browned.
- Add the red chili powder and garam masala to the pan and stir to combine. Cook for another 30 seconds and then remove from heat.
- Add the tarka to the lentil pot and stir well. Cook for another 5 minutes over low heat until the flavors are fully combined.
- Top with fresh coriander before serving.
