Vegetable Quiche Recipe

Ingredients:

  • 1 (9 inch) unbaked pastry shell
  • 1 tablespoon butter
  • 1 cup chopped mushrooms
  • 1 cup chopped broccoli
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1/2 cup shredded cheddar cheese
  • 4 large eggs
  • 1 cup milk

  4. Sprinkle cheese over vegetable mixture.
  5. In a medium bowl, whisk together eggs, milk, salt and pepper. Pour over cheese and vegetable mixture in pastry shell.
  6. Bake in preheated oven for 35 minutes. Cool for 10 minutes before serving.
