Blackcurrant and Chocolate Chip Pavlova Recipe

Ingredients:

  • 6 large egg whites
  • 1 1/2 cups superfine sugar
  • 1 tsp white vinegar
  • 1 tsp cornflour
  • 1/2 cup blackcurrant jam
  • 1 cup heavy cream
  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the egg whites until stiff peaks form.
  3. Add the superfine sugar, one spoonful at a time, continuing to beat until the mixture is glossy and the sugar has fully dissolved.
  4. Beat in the white vinegar and cornflour until well combined.
  5. Gently fold in the chocolate chips, being careful not to knock out too much air from the mixture.
  6. Spoon the mixture onto the prepared baking sheet, shaping it into a large circle with a slightly hollow center to hold the cream and blackcurrant filling.
  7. Bake for 1 hour, then turn off the oven and leave the pavlova inside until it cools completely.
  8. In a separate bowl, beat the heavy cream until it forms soft peaks.
  9. Gently fold in the blackcurrant jam, reserving some for drizzling over the top of the pavlova.
  10. Spoon the cream and blackcurrant mixture into the center of the pavlova and smooth it out to the edges.
  11. Drizzle the remaining blackcurrant jam over the top of the pavlova. Serve immediately.

Verdict:

This Blackcurrant and Chocolate Chip Pavlova is a delicious combination of sweet and tart flavors, with the added crunch of chocolate chips. The pavlova itself is light and airy, with a crisp outer shell and marshmallowy center. The cream and blackcurrant filling makes the perfect accompaniment, adding a fruity tang and creamy texture. It’s a great dessert for any occasion, and is sure to impress your guests!

Serving suggestions:

Serve the pavlova immediately after adding the cream and filling, as the meringue can become soft if left for too long. It’s best enjoyed with a cup of your favorite tea or coffee, or perhaps a glass of chilled white wine. If you’re feeling extra indulgent, try adding some extra chocolate chips or fresh berries on top for an even more decadent dessert experience.
