Easy Chocolate Muffin Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Directions:

  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin with liners, or grease with cooking spray.
  2. Sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In a separate medium-sized bowl, whisk together the vegetable oil, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix!
  5. Add in the chocolate chips and stir again until combined.
  6. Use a spoon or ice cream scoop to evenly fill the muffin cups with batter, about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick or cake tester comes out clean when inserted into the center of a muffin.
  8. Remove from the oven and let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
