Fish and Tomato Crumble Recipe
Ingredients
- 2 large ripe tomatoes
- 500g white fish fillets
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 cup breadcrumbs
- 2 tbsp butter, melted
- 50g grated parmesan cheese
Instructions
- Preheat the oven to 180°C/350°F.
- Cut the tomatoes into small cubes.
- Cut the fish fillets into bite-sized pieces.
- Heat the olive oil in a pan over medium heat.
- Add the chopped onion and minced garlic and cook for 2-3 minutes until soft and fragrant.
- Add the cubed tomatoes and cook for another 2-3 minutes until they have softened and released their juices.
- Add the fish pieces to the pan and toss to combine with the tomato mixture.
- Season with salt and pepper to taste.
- Transfer the fish and tomato mixture to a baking dish.
- In a small bowl, mix the breadcrumbs, melted butter, and grated parmesan cheese.
- Sprinkle the breadcrumb mixture over the top of the fish and tomato mixture.
- Bake for 20-25 minutes or until the crumble is golden brown and the fish is cooked through.
