Fish and Tomato Crumble Recipe

Ingredients

  • 2 large ripe tomatoes
  • 500g white fish fillets
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup breadcrumbs
  • 2 tbsp butter, melted
  • 50g grated parmesan cheese

Instructions

  1. Preheat the oven to 180°C/350°F.
  2. Cut the tomatoes into small cubes.
  3. Cut the fish fillets into bite-sized pieces.
  4. Heat the olive oil in a pan over medium heat.
  5. Add the chopped onion and minced garlic and cook for 2-3 minutes until soft and fragrant.
  6. Add the cubed tomatoes and cook for another 2-3 minutes until they have softened and released their juices.
  7. Add the fish pieces to the pan and toss to combine with the tomato mixture.
  8. Season with salt and pepper to taste.
  9. Transfer the fish and tomato mixture to a baking dish.
  10. In a small bowl, mix the breadcrumbs, melted butter, and grated parmesan cheese.
  11. Sprinkle the breadcrumb mixture over the top of the fish and tomato mixture.
  12. Bake for 20-25 minutes or until the crumble is golden brown and the fish is cooked through.
