Ingredients
- 1 cup dried lentils
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint

Instructions
