Ingredients

  • 1 cup dried lentils
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and add them to a large pot of boiling salted water. Cook for 20 to 30 minutes, or until tender but not mushy.
