Tiramisu Recipe
Ingredients:
- 6 egg yolks
- 3/4 cup white sugar
- 2/3 cup milk
- 1 1/4 cups heavy cream
- 1/2 teaspoon vanilla extract
- 1 pound mascarpone cheese
- 1/4 cup strong brewed coffee or espresso
- 2 tablespoons rum
- 24 ladyfingers
- Cocoa powder for dusting
Instructions:
- In a medium saucepan, whisk together the egg yolks and sugar until well combined.
- Add the milk and whisk again.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and coats the back of a spoon. Do not let it boil.
- Remove the pan from heat and let it cool to room temperature.
- In a large mixing bowl, beat the heavy cream and vanilla extract together until stiff peaks form.
- Add the mascarpone cheese and beat until smooth and creamy.
- In a small bowl, mix the coffee and rum together.
- Dip each ladyfinger into the coffee mixture and arrange them in a single layer at the bottom of a 9×13 inch dish.
- Spoon half of the mascarpone mixture over the ladyfingers and spread it evenly.
- Repeat with another layer of coffee-dipped ladyfingers and the remaining mascarpone mixture.
- Cover the dish with plastic wrap and chill in the refrigerator for at least two hours but preferably overnight.
- When ready to serve, dust the top of the tiramisu with cocoa powder.
