Tropic Tajine Recipe
Ingredients:
- 1 lb chicken breast, cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 can pineapple chunks, drained
- 1/4 cup dried apricots, chopped
- 1/4 cup raisins
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground coriander
- 1/2 tsp ground cumin
- 1/4 tsp cayenne pepper
- 2 cups chicken broth
- 2 tbsp cornstarch
- 3 tbsp water
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions:
- Heat olive oil in a large Dutch oven or pot over medium-high heat.
- Season chicken with salt and pepper and cook in the pot until browned on all sides. Remove and set aside.
- Add onion and garlic to the pot and sauté until fragrant and translucent.
- Add bell peppers, pineapple chunks, apricots, raisins, ginger, cinnamon, coriander, cumin, cayenne pepper, and salt to taste. Stir until well combined.
- Add chicken broth and bring to a boil.
- Reduce heat to low and add the chicken back to the pot. Cover and simmer for 20 minutes or until chicken is fully cooked.
- Meanwhile, mix cornstarch and water in a separate bowl until smooth.
- Stir cornstarch mixture into the pot to thicken the sauce.
- Simmer for an additional 5 minutes.
- Remove from heat and serve hot.
