Tropic tajine – Delicious


Tropic Tajine Recipe

Ingredients:

  • 1 lb chicken breast, cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 can pineapple chunks, drained
  • 1/4 cup dried apricots, chopped
  • 1/4 cup raisins
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 2 cups chicken broth
  • 2 tbsp cornstarch
  • 3 tbsp water
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions:

  1. Heat olive oil in a large Dutch oven or pot over medium-high heat.
  2. Season chicken with salt and pepper and cook in the pot until browned on all sides. Remove and set aside.
  3. Add onion and garlic to the pot and sauté until fragrant and translucent.
  4. Add bell peppers, pineapple chunks, apricots, raisins, ginger, cinnamon, coriander, cumin, cayenne pepper, and salt to taste. Stir until well combined.
  5. Add chicken broth and bring to a boil.
  6. Reduce heat to low and add the chicken back to the pot. Cover and simmer for 20 minutes or until chicken is fully cooked.
  7. Meanwhile, mix cornstarch and water in a separate bowl until smooth.
  8. Stir cornstarch mixture into the pot to thicken the sauce.
  9. Simmer for an additional 5 minutes.
  10. Remove from heat and serve hot.

Serving Suggestions:
